Panelists:

Becca Jablonski (Colorado State University) is an Assistant Professor with expertise on local food systems. She has done extensive work on the food supply chain, including linkages with restaurants.

Keenan Marchesi (USDA Economic Research Service) is a research economist with expertise in food markets and breweries. He manages data that can be used to analyze restaurants, including the NPD Crest series and the National Establishment Time Series dataset.

Adam Schlegel (Cumulus Etc) is a restaurant consulting company CEO. Adam is the founder and owner of Chook Chicken. He was the co-founder of Snooze AM Eatery, and has done extensive work as a board member and nonprofit leader in the areas of health and sustainability as they relate to restaurants.

Ashley Kosiak (James Beard Foundation) is the Director of Programs for the James Beard Foundation. She has developed programming and content streams for chefs and others in the culinary arts, including the Chefs Bootcamp for Policy and Change program which networked over 250 chefs across the country.

Description: Even before COVID-19 hit, there were big changes in the restaurant industry, including growth in the consumption of food away from home. And most recently, there have been major impacts from the pandemic on food service. These phenomena have fueled a growing interest in research on restaurants. This panel will bring together experts from academia, government, and industry to talk about trends and issues such as new technologies in food service and changes in the supply chain affecting local restaurants. The panel will also discuss research approaches for understanding the restaurant industry, which will serve as a launchpad for researchers hoping to break into this field. 

Format: Moderated discussion, followed by Q&A from the audience
