And most recently, there have been major impacts from the pandemic on food service. These phenomena have fueled a growing interest in research on restaurants. This panel will bring together experts from academia, government, and industry to talk about trends and issues such as new technologies in food service and changes in the supply chain affecting local restaurants. The panel will also discuss research approaches for understanding the restaurant industry, which will serve as a launchpad for researchers hoping to break into this field.
